3 Reasons I decided to buy an Instant Pot Mini

I don’t know about you, but I’m a busy person with an absurdly long commute. I’m always looking for ways to cut my cooking time. It’s a struggle sometimes to not revert back to bowls of cereal for dinner.

I’ve been following the Instant Pot craze about a year ago because a few of my Facebook friends have been posting about it. I decided to join a Facebook group or two to lurk and understand what this whole thing was about.

Today (!!!) I finally decided to buy an Instant Pot Mini after hemming and hawing for the last bunch of months since my bird gave me an Amazon gift card for Christmas. Don’t your pets give you gifts too??

Why I decided to buy an Instant Pot Mini

As I mentioned above I’m looking for ways to cut and simplify cooking, where I can. There are multiple models and sizes to choose from and while they all look potentially interesting, I decided to buy an Instant Pot Duo Mini 3Qt.

Why?

Honestly, I’m starting this as an experiment. Most people seem to love their Pot, but before I spent too much money I decided to start with the smaller (less expensive) option.

I live in a townhouse where storage space is a premium. Surprisingly I have a decent amount of counter space, including space not under cabinets (i.e. quick release steam!). I’m also trying to get back to leaving less stuff on my counters (wishful thinking I know), so I want to make sure I can stash it away when I’m not using it.

I’m generally cooking for one. Leftovers are great and so is batch cooking (my plan here of course), but there’s a limit to how many portions of something are awesome until they’re just boring. And I want to try a bunch of different recipes. If I overly fill my freezer with just one recipe or two it doesn’t leave me to cook and store more.

So there is it, I decided to buy an Instant Pot Mini to give it a try without a huge investment that I can store easily and cook with for generally 1 person.
